220 BPM is an immersive dining experience conceived by Chef Jérémy Galvan, where traditional restaurant conventions are deconstructed to make way for a sensory, artistic, and deeply emotional approach to dining.
The restaurant welcomes its guests into a unique world, enveloped by a dense, wild forest, a true source of inspiration and raw ingredients.
This connection to nature is reflected both in the venue’s architecture with dreamlike decor evoking an organic cocoon and on the plate, through a locavore cuisine.
With only 14 seats per service, custom-designed as living, dynamic spaces, the atmosphere is one of total intimacy.
The experience unfolds like a staged performance: the kitchen doors open and close like a theater curtain, revealing the team members as actors moving through an immersive , conceived in collaboration with Rachel Benali.
