Beneath the arcades or behind the shopfront typical of the neighbourhood, the aroma of warm brioche welcomes curious passers-by. Created in 1955 by Auguste Pralus – the very year he was awarded the prestigious title of Meilleur Ouvrier de France – the Praluline® is the undisputed star of the display window. Famous for its melt-in-the-mouth crumb and generous chunks of pink praline, made with Valence almonds and Piedmont hazelnuts, this speciality embodies pastry-making excellence and stands as a key ambassador for the region’s local produce.

The shop also showcases the world of chocolate under the guidance of François Pralus, one of the pioneers of the ‘Bean-to-Bar’ movement in France. A true artisan of flavour, he selects his cocoa beans from around the world, roasts them and refines them to create single-origin chocolates with subtle aromas. Alongside the grand cru bars, the shop showcases its signature creations, such as the Barres Infernales: generous chocolate ingots filled with pralines, dried fruit, candied orange peel or homemade nougat.
