An authentic Lyonnais bouchon, Les Culottes Longues is located a stone's throw from Place Bellecour in the Ainay district, a former antique dealer's haunt. In a friendly and rustic setting, it's hard to miss these magnificent culottes framed on the wall. Access to the upstairs dining room is via a spiral wooden staircase in the center of the room.
Founded in 1995 by François Paillet, David Cano first worked as a commis at this restaurant. He then rose through the ranks and eventually became chef. It was then that he decided to buy the bouchon in 2005. This defender of Lyon's culinary tradition is constantly trying new things to improve and progress.
It's impossible not to succumb to its Lyonnaise salad, its sausage, or its calf's liver. Renowned for its fine dining, the watchwords of this bouchon are terroir, season, and region. A warm and traditional atmosphere are the order of the day in this friendly place.
